Ingredients for making candied pumpkin:
1 kilogram of pumpkin
1½ liters of water
½ kilogram of sugar (500 g)
100 grams of quicklime
8 carnations from India
1 cinnamon stick
crystal sugar to taste
How to Make Candied Pumpkin:
Prepare your candied pumpkin by peeling the pumpkin, opening it in half and removing the seeds. Then cut the pumpkin into cubes (the size of the cubes should be small enough for you to be able to eat them all at once).
Tip: The best types of pumpkin to make pumpkin candy are neck squash, dried squash and pumpkin from São Paulo.
Then dissolve the lime in 1 liter of water and dip the pumpkin cubes. Let it sit for 1-2 hours, stirring occasionally. Then drain the water and rinse the pumpkins under running water.
Tip: Quicklime will help make the candy soft on the inside and crunchy on the outside, don't forget to use it! If the squash is not covered with 1 liter of water, add to the squash completely.
Place the pumpkin in a pan and add the remaining water, sugar, cloves and cinnamon stick. Bring to medium heat and wait for a boil. Then lower the heat, cover and cook for approximately 40 minutes, or until the squash is soft and the water evaporates into a slightly thick syrup. Turn off and let cool.
Tip: If the pumpkin starts to dry during cooking, add a little more water.
If you want, drain the pumpkin cubes with a sieve or a colander, pass it on the crystal sugar and let it dry. You can also serve the pumpkin bricks with the syrup. Reserve in a closed jar and enjoy whenever you want!

One of the secrets to get a candied pumpkin crunchy on the outside and soft on the inside is to use quicklime in the preparation, as indicated in the recipe above.
Those who are not used to making candied pumpkin jam with lime may find it strange to use lime in the preparation of this dessert. Lime is a white powder extracted from limestone rocks and widely used in construction. Quicklime, on the other hand, is widely used in the kitchen, especially by former pastry makers from the Brazilian interior.
Where to buy quicklime? Look for the product in the market and in construction stores. The packaging should read 'virgin lime for culinary use. You may be interested to read about the custard apple mousse recipe/ mango lassi recipe/ chayote benefits blogpost/ kiwi jam recipe/ mandarin jam recipe.
